I want to share NPCs with my player, handle combat, move...., but I don't want the players to see the NPCs stats. Is this possible?

You can mark the NPCs as friendly faction which allows them the players to move the token. However, there is no way to allow the players to roll the NPC combat rolls without showing them the sheets to allow them to make the rolls.

If you want to hide certain things from the PCs you could make a dummy NPC record that only had the minimum details needed for the control level you want the players to have - e.g. just attack and damage for the most common weapons they carry. Then share this dummy NPC record with the players so that they can move it's token on the map and do basic combat actions.

I had a similar issue when running Out of the Abyss with the wererat siblings. I just made dummy npcs as stated.
Outside of that they can be set to friendly if you just want them to move the npcs around.
