Is there way to create an NPC from a PC template easily? (or vice versa)?

For Key NPCs I like to have a more filled out sheet than the standard NPC sheet.

So any way I can save myself time would be helpful

You dont mention what ruleset.
Savage Worlds does allow you to convert them back and forth and Call of Cthulhu 6 has some ability in this area.

PCs cant be added to Encounters.

No, you can’t change an NPC into a PC or vice versa since the character sheets are funtementally different.

If you need to have more than the NPC sheet gives you then create a PC which you can control. Make sure you take ownership of the PC otherwise your players will see it in character selection.
