Question about Discord

When using Discord for my game should I just choose any available channel of the 10 channels available on the FG server, or should I just create a whole new server?

either, i started out using the available chats, but i have since created my own channel. this way my gamers and i have a place to chat about our games (and life) without hijacking the chats. now they can ask me questions, or i can ask them, or we can talk about the game out of session without me talking even more in the FG Discord channels

I would recommend making one of your own. It's simple enough to do that even I figured it out.
