I am interested in using a Lavawight in my 5E campaign (Princes of the Apocalypse in the fire area), but not really sure where to start to convert it.

I'm not aware of this type of NPC but I would imagine that a wight would be the starting point.

I have not. But I have created quite a few 5E creatures. I'm not sure where it is, maybe Angry GM (https://www.google.com/url?sa=t&rct=j&q=&esrc=s&source=web&cd=3&cad=rja&uact=8&ved=0ahUKEwifjebC07bTAhUWz2MKHXUjDIIQFggzMAI&url=http%3A%2F%2Ftheangrygm.com%2Fmonster-building-101-its-alive-its-alive%2F&usg=AFQjCNHSESUnt8a6fGffwq9fODtIm9Fj2g&sig2=0qaDRN8iw0cuSaf-3tYE8w)?, but there is a good outline on how to create 5E creatures somewhere if not that one.

Don't try to convert stat by stat. First, decide on the CR, then using the DMG tables, pretty much decide on most everything else. Use the old version of the creature for flavor, i.e. what types of attacks, does it have one for the damage listed in the DMG or multiple at a fraction? Does it have spells or special abilities? But use 5E examples to create the attacks and abilities, resistances etc.
