Do our maps require grids? Are grids necessary for combat, encounters, etc? Seems like an older tutorial said the grids were necessary but he may have been using the older version of FG. Is this still the case (maybe for token sizing also)? Is there a away to make the grids invisible to the players?

Putting an FG grid on your map has a number of effects:

Auto sizes tokens if this is enabled in the campaign options (by default it is set to auto size at 80%). If the ruleset supports it the token will be sized based off the creature size.
Shows distances for lines drawn, targeting arrows, cones/circles, etc..
Shows distances for movement if locked tokens (enabling GM movement approval) are enabled.
If the ruleset supports it - shows creature size and reach. Plus faction colour (if there's space within the grid square/s to show).

No, they are not required. But as Trenloe points out, there are a large number of benefits to adding an FG grid overlay to a map.

Question, do you mean grids in the base image or placed on the map by FG?

They're not a requirement for combat, encounters, etc. but they do provide some nice features (see my post above).

Nope. If you add a grid it's visible to all the image is shared with.
