Do you guys use tokens and just have them hidden or do you tend to use theater of the mind kind of a deal? any advice on how you guys do it would be great

This might depend on what system you're using - and how you as a GM operate. Most will have a story linked to the map (showing a private shortcut/pin) so that the GM knows there's something there, and the body of the story can describe it and have a link to a NPC entry to simulate the traps effects if you wish - the title of the story entry will be the hover over text of the pin.

Theater of mind if the traps are described at a specific location. If the trap is positioned where it may come into play during combat I'd use a hidden alpha transparent token of some kind.

I really wish FG had some kind of alpha layer at 50% or adjustable.

I have a map pin linked to the trap details, for my own reference. In play, I just describe the outcome. If there's some ongoing effect, or an automatically reset trap that's been detected, that might get marked on the map using pointers.
