Anyone try the titled setup with something like the link above? Does it work?
I would want to extend the primary monitor into the USB monitor and then stretch FG across both monitors.

Depends on the drivers. I've used a USB dock to drive a second monitor. It was ok, but not the same as using a HDMI or VGA cable to connect a second monitor.

I have monitors everywhere so I've never used that device. If you don't have any spare monitors just make sure your laptop has USB 3.0 ports (as it doesn't appear that monitor has a power cable, it uses power from a USB 3.0 port).
If you do have a monitor you can use you could use a regular USB adapter (like this (https://www.amazon.com/StarTech-External-Video-Monitor-Adapter/dp/B005G306I2/ref=sr_1_2?s=pc&ie=UTF8&qid=1461197807&sr=1-2&keywords=startech+usb) one if your monitor uses VGA or this (https://www.amazon.com/StarTech-com-External-1920x1200-Graphics-USB2DVIE3/dp/B005G3066Y/ref=sr_1_2?s=pc&ie=UTF8&qid=1461197942&sr=1-2&keywords=startech+usb+dvi) one if you're using DVI).
The easiest (and cheapest) option is to just plug a monitor into your laptop. If you have a newer laptop that only has HDMI but your monitor doesn't support it--but has a DVI connector--you can get a DVI-to-HDMI cable pretty cheap here (https://www.amazon.com/AmazonBasics-DVI-HDMI-Adapter-Cable/dp/B014I8UL8U/ref=sr_1_7?s=pc&ie=UTF8&qid=1461198057&sr=1-7&keywords=dvi+to+hdmi).

I run Fantasy grounds for at the table games at my FLGS. This is why I was looking at portable solutions instead of regular external monitor.
While looking at options, I found some apps that claimed to turn my ASUS tablet (tf700t) into a second external monitor. I tried several of the free and free demo apps without any luck. I almost didn't try twomonusb because of the cost and it didn't have a demo mode. But I did...and it worked. So I was able to do a proof of concept of the extended display idea with my tablet. I quickly decided that I really want the extra screen space. So I pulled the trigger on the AOC display.

I use the Wacom 13" Cintcq https://www.amazon.com/Wacom-Cintiq-Touch-Tablet-DTH1300K/dp/B00U2K20H4/ref=sr_1_2?ie=UTF8&qid=1461592610&sr=8-2 along with a 42" monitor for the players to look at. A bit more than the other, but it works really well.

Reporting that the Windows 10 laptop + AOC USB Monitor works together. I was able stretch a Windowed FG desktop across both screens so that I have the DM map open on one display and linked story windows, combat tracker, NPC sheets, etc open on the other. A lot less "digging" for various windows during game.
