I have been known to dabble in photoshop are there any good tutorials on how to make your own Character portraits and such?

There are various answers to this.
None of the rulesets use a portrait larger than 100px.
So create the image as big as you want but you will resize it to somewhere between 46 and 100px square.
Bigger images will work they are just wasting memory.
Keep them square or FG will stretch them.
