is there a way to change my players tokens in 5e so they are round and not square

You won't be able to use the token auto generated from the player portrait (unless there is an extension/theme that changes it to a circle). But you can add a circular token (from the tokens list) to the character sheet by dragging the token to the top right of the PC sheet.

Note: if you use an extension to change the portrait-to-token functionality then it will change it for all PCs in that campaign - it's not a per PC option.
