I only see Calendars, FG Battle Maps, and Default Fumble modules. Shouldn't I be able to see the manuals too?

Which ones have you purchased? And where did you but them - the FG website store or Steam? If Steam are you using a PC or Mac?

I signed up for the $3.99 subscription on the web site. Using a PC. Windows 10. Do I have to buy other items separately still?

Also, is there a way to randomly connect to a GM to see what it is like?

What you get with Fantasy Grounds is the ruleset for 5e which means that you can create characters and monsters etc from the 5e rulebooks and FG will handle combat encounters correctly. However you don't get the Player's handbook or the Monster Manual with the software. Those you have to purchase separately if you want or need to. It rather depends on your budget and if you intend to be a Dungeon Master or a player.

You can't randomly connect to a DM, you need to organise that. Check out the 'Looking for Group (https://www.fantasygrounds.com/forums/forumdisplay.php?40-LFG-Looking-for-Group-%28formerly-Guild-House%29)' part of the forum and also the FGCon (https://www.fantasygrounds.com/forums/forumdisplay.php?94-FG-Con-%96-Fantasy-Grounds-Virtual-Convention) which is happening soon(ish). The latter would be a great place to find out how Fantasy Grounds works as a player.

So is the "Players Handbook" called the "Core Class Pack"? because I cannot find anything in the store under the 5e that says players handbook.

Thats correct - https://www.fantasygrounds.com/store/product.xcp?id=WOTC5EPHBDELUXE
It isnt ACTUALLY a handbook so the Wizards didnt want the product to be mistaken for an electronic PHB. It has all the same content but is really only useable with and for Fantasy Grounds hence the renaming.
