Are PCs able to roll from their spell sheet in the Character Sheet? or is there another way? I am not understanding how PCs roll like how a weapon does.

Yes, but you'll need to setup actions (cast, attack ,damage, effect) to do this - if it isn't created as part of dragging the spell from the library. Right-click on the spell title, select "Add action" and then cast, attack, damage or effect. Then fill out the action details as needed (click the magnifying glass icon at the right of the icon to open the details view of each action).

I think the answer to your question is a qualified yes. As trenloe says not every spell that you drag onto the characters sheet will 'parse' correctly. In other words some spells will be set up exactly as you would want, but others won't. For example if you drag the 'fireball' spell into the players action tab you will see that it has done a few things. If you make sure that the 'mode' down at the bottom of the sheet is set to 'combat' (click on it until 'combat' shows') and make sure that 'Actions' is displayed in the 'Display' box. Now next to Fireball you will see two small icons, a dice and a blood drop. When the PC wants to cast fireball they should target in the Combat Tracker all of the NPCs that will be affected by the spell. Now they can click on the little dice icon next to fireball and all of the NPCs will be forced to make a saving throw. The PC can then click on the blood drop and the damage dice will now roll. All of the NPCs that failed their save will take full damage and those that succeeded will take half damage.

So, in other words, if the spell 'parses' correctly everything that needs to be done to make the spell work will automate and the players just roll to hit and damage just like they would if it was a weapon.

On the other hand if you drag over the spell 'Mage armour' you will see that it doesn't parse anything. No effects are created for this spell. In order to create the effect right click over the spell and select 'add action' from the radial menu and then 'Add effect'. This will create a new line under the spell. Now click on the magnifying glass at the right hand side of the new line and in the dialog box under 'description/conditions/modifiers' type in AC: 3 and then close the box. You have now created an effect which, when dragged onto a character, will increase their AC by 3 points (You won't see any difference to their AC on the character sheet but when subjected to an attack FG will take account of the extra 3 points when determining if the attack hits or not).

This. 1000x this. It can be daunting at first, but understanding how to do these opens up a whole new world. It's like looking at God. Almost.
