i'm probably missing something simple but how do you create quests which, if completed, give Xp once you drag them to party window?

Use the right-click or edit menus directly within the quest section to create a quest item. Then you award them once they're complete - right-click on the quest and select "Award XP". the "Aw?" circle will be checked once the quest has been awarded.
