How does the Item: Identification option work? I cannot see any identification option in magic items of 5E modules like LMoP. Is there a way how to give players unidentified item, and then easily identify it during short rest?

If you pick up an item from the Magic Items section of LMoP, say the Ring of Protection, you can drop it in Parcel Items of the Inventory section of the Party Sheet.... or you can pick it up and drop it in a players inventory ....

It remains unidentified till you determine through rest, or spell, they know what it is, at the point go into the item (on the players inventory ) and click on the red circled, and lined though ID symbol in the top right hand corner of the item. When you click, it will go green circle, and the description will change on the players sheet

The option to make items identifiable or unidentifiable is in the DM options screen. If you check in there you will find an option for Item: Identification under the GM(Game) category which can be set to "on" or "off". If it is set to "on" then any item you create will automatically be unidentified at the point of creation. You can tell that it is unidentified because there will be a little icon in the top right hand corner with ID in a red circle with a score through it. Then as Mavrik says once the PCs have managed to identify the item the DM can click on that icon to change it to identified. Also if you create something which you want to be identified right away then you can click on the icon during the items creation.
