Hey, I'm doing a TON of tables for my DMG, and using collapsible headers, using #@;. Is there a trick so that they start closed?

Also, in a table with multiple columns, is there a way to put things in different columns without using the semicolon in between?

I'm not sure what your first question is but on the second one I'd have to say the answer is no. Par5e uses the semi colon to do the parsing so if it wasn't there it wouldn't parse.
