The 3D dice are kinda cool, but even after a fairly short play they wear a bit thin. Is there anyway to switch off the animation so it goes straight from Selecting Dice to Declaring Result in the chat frame?

The short answer is no. However, I find that most people seldom roll the dice manually after a while. With most rulesets you can just double click the stat / mod / skill /power / attack / damage, etc on the mini map or character sheet and the dice will roll automatically from the double click.

Ditto - hotkeys also help speed this up - I can chuck out the rolls for a dozen goblins with twelve quick key presses.
As for the actual dice animation (which still occurs), it's actually a really important feature of FGII for me - one or two seconds to find out if my action succeeded. Esp. in a system like Savage Worlds where the highest roll on a die causes another die to roll and add onto it - watching those dice "explode" is awesome.

I have to agree the reason I bought FG1 was the dice!
Also why remove them, if you were sitting around a table you'd be rolling dice?

Yep, same here. Its why I kinda get annoyed when there is excessive hiding of dice rolls by GMs at times, but then again I rarely us gm screens as it proves to be too much of a separator, they need to make ones about 1/2 as high.

I want to get rid of them because, much as I love rolling dice in RL, in a VTT they just get in the way of an already crowded screen and slow down what is essential just random number generation.
But obviously, I'm in a minority here! It's just that I really would much rather have 1-click random numbers without waiting around for a physics simulation to do it's thing. I want a VTT so I can game more, every millisecond counts! ;)

In all honesty, when you get into an actual game, the fraction of a second it takes the dice to roll isn't a time sink.
You will spend far more time waiting for;
- other players to decide, state and then carry out their action(s)
- discussion over what to do next
- DM to figure out how to do something on his/her end and/or explain what happens after a PC/NPC acts and tries to do whatever it is they are attempting
The dice visuals aren't a big time waster.
