How would I go about completely removing default stories from BRP (such as 'assault on the farmhouse', 'dwelling of the ancients' etc).
I have tried to delete them from within FG, but they always reload.
As always, any help would be greatly appreciated.

If you want them permanantly deleted delete the module file:
Start - Fantasy Grounds 2 - Appllication Data Folder - Modules
Delete any modules you don't want. It's possibly a better idea to just move the files somewhere else on your PC in case you want them again later.

Good advice. We'vs all probably played these one-offs a gazillion times, but they are a good introduction to making further modules in the ruleset, if you so desire in the future. Additionally I've used them to "bring people over" to the BRP experience.

If you go into the Library tab and then click on Module Activation.
Just close the book icon beside the modules you don't need. ( drag the book closed Left to Right )
That way they aren't deleted and if you need them later you just Open the book.
