I haven't tried it yet, but is FG multi-mon compatible?.... how difficult would something like that be :P?

Several people have used FGII stretched over two monitors. You should keep it in Window mode, rather than full screen and drag the edges until it covers the two monitors.

I find it best to open Fantasy Grounds on on my left monitor and PDFs and Diggsby on my right monitor.

Indeed I do the same except that it's my third monitor (2nd PC) I do this on, (Stops the whole DirectX update issue).
I use a nifty bit of software called Multiplicity to allow me to use one keyboard and mouse (and copy clipboard/files between the two).

Well my next big project when I get the money is to get FG on a wide-touchscreen monitor turned sideways and was thinking about trying to span it across two of those monitors. I suppose it could be done in windowed mode... We'll see how it turns out.
