I know there is a way to manually add and delete vision using a mask. My question is this; are there plans to implement line-of-sight capabilities similar to MapTools? Instead of drawing what characters (not players) can see, a function that blocks areas that they can't see.

Do you have to create your map in Maptools to do make that work? I haven't checked it out, so I'm just curious. I'm wondering how much work it is to define walls as being walls that block LOS instead of just a line on the floor, defining furniture height, and so on.
I guess that would be my big reservation about such a feature. How much does it add to the DM's workload?

In MapTool, you can only define walls, and it only has two way vision blocking. For example; you have a cliff with LoS blocking the edge. Creatures on top can not see past the LoS wall at creatures at the bottom of the cliff and vice versa.
You do draw the LoS on the map itself in MapTool, but it is fairly quick. They have multiple drawing shapes that can be used, as well as a free-form line tool.
It doesn't add much to the workload of the DM because of this. The LoS is also dynamic, so when a character moves it automatically updates as the token moves.

I was able to draw my walls using the tools in FGU itself in a matter of minutes.
