I'm attempting to figure out whether or not Fantasy Grounds is going to be viable at speed with a group of people. I figured the best way to determine this was to have us all set up the demo on our computers and then run it, with my computer hosting a game. However, my computer's on a local network, with the usual local IP address.

Since the demo disables key word usage to connect, how can I go about connecting with other people to find out whether or not this is viable?

You send the external IP address to the people you wish to connect with. If you don't know what the external address is then go to https://www.whatsmyip.org/

Just like the real version you are going to need to configure your router and firewalls to allow connections on TCP/IP 1802 and port forward the connection to your local IP address.

FYI The demo only allows two clients to connect to the server.
