Can we save and backup whatever is in our chatbox? That is pretty important for our games? Do we have to write everything in the journals?

FG automatically keeps the chat text on the server in the FG campaign folder in the Application Data directory. The file is called chatlog.html

I see, does this not show up in the demo? We are talking about running the demo campaign with two of our players to see if it works before we commit to purchasing. I went to the program folder ( C:\Program Files\Fantasy Grounds II Demo) and couldn't find that particular file.

Welcome to the forums Pegacorna, I hope you find us helppful here.
The file isn't in the Program Files folder, it is in the Application Data folder. You need to go to the FG2 group in your Start Menu, and look for the "Application Data Folder" entry. That is where FG stores campaigns and rulesets. The chat log will be in campaigns/<campaign name>/chatlog.html.

Apart from what Foen says, I think the Demo does indeed not save the chatlog. I can verify the real deal does so though, saves a lot of time, too! :)

Keep in mind the demo is static and doesn't save any changes including input characters.

Ah, Got it. OK, that helps a lot actually. OK, so I will talk to my group and see who wants it. I know I like it a lot and so does one of my players. :D woot!

I had one more question. We are re-establishing our old site: https://s1.zetaboards.com/Abathia/index/ and what we want to do, is post our chat logs there. Are the chat logs in text? Do they translate well to just having the text pasted? Thanks in advance.

The chat logs are html and won't necessarily translate in to text very well.
Sorry
:o(

Like, Foen said the chat log is a html file. The problem with posting chatlogs verbatim is they also include whispers and DM rolls. This may or may not be a problem. There is a chatlog scrubber Josh made that strips out whispers and system messages.
Here's an old chatlog from a one shot game I ran several years ago at iCon now FUMcon: https://www.mediafire.com/?jygnf0iq4qg
I was using voice in that game but there is still a bunch of text so you should be able to get an idea of what a log looks like.

Note that Joshuhua made a fantastic chatlog scrubber which lets you manipulate the chatlog and clean it up before exporting it for posting somewhere. Very, very handy.
